pump pressure doen't seem to kick in properly?!.. when the shower head is on the wall the water doesn't pump up through?!.. Yet when the shower head hose is taken off at a lower level then the pump seems to kick in? Any reason why this could be?!

Your shower is in what we call a negative head situation, where the head of the shower is above or within 50 cm below the bottom of your cold tank. To prevent this you need a universal/ negative headed pump, or if it is a Grundfos/ watermill pump you can fit an adapter.
