do you have an alternative knob for someone with artheric hands, who finds it difficult to turn knobs, maybe a lever type

Unfortunately there is no alternative that we know of .

If the knobs are getting stiff then replacing the valves should help, however that is not really an answer.

An occupational therapist may be able to suggest a soluition.
